Sourdough Starter Crackers – V1

Crackers made from sourdough starter discard.




I’ve been looking for ways to use up my sourdough discard. This recipe uses 200 grams of starter to make 18 “1×3 inch” crackers:
Ingredient | Amount | Unit |

Sourdough Starter (50/50mix) | 200 | grams |
Butter (melted) | 2 | Tbsp |
Salt to mix in | 1/4 | tsp |
Garlic Powder | 1/2 | tsp |
Onion Powder | 1/2 | tsp |
Italian Seasoning | 1/2 | tsp |
Salt to sprinkle on top | ||
Pepper to grind on top | ||
Parchment Paper |
Steps:
- Preheat oven to 325
- Combine Starter, melted butter, 1/4 tsp salt, garlic powder, onion powder, and Italian Seasoning in a bowl.
- Mix well
- Line cookie sheet with parchment paper
- Pour mixture onto parchment paper
- Spread into your desired cracker thickness with an offset spatula
- Sprinkle with salt, and some black pepper.
- Bake for 10 minutes to set the batter
- Remove from oven and score in into your desired cracker shape and size.
- Return to oven until browned (another 20 or so minutes)
- This will depend on how thick you made them, and if your oven runs hot/cold.
- Just check them every once in a while to see. They WILL brown quickly once they start to — watch out!
My Thoughts:
Pretty good overall! Oddly enough I liked the less browned ones better, not what I was expecting when I first tried a couple.
I think baking soda or powder might result in more bubbly/flaky crackers?
I probably should use the convection setting on my oven to prevent inconsistent browning.
