Penny’s Banana Bread

Penny thinks this recipe might be Maime’s – the photos are of Penny’s hand-written cards. It’s easy to make and tastes amazing!
Pro tip: Try toasting a slice and top with butter and cream cheese.
Oh, and no one puts nuts in but you can if you want.
Ingredient | Amount |
---|---|
Brown-flecked bananas | 1 1/2 Cups / (3 – 4 bananas) |
Milk | 1/4/ Cup |
Apple Cider Vinegar | 1/2 tsp |
Vegetable Oil | 1/4 Cup |
Eggs (beaten) | 2 |
Vanilla | 1 tsp |
Butter for the pan | Enough to cover insides of pan |
Chopped Walnuts (optional) | 1 Cup / 4 oz |
Sifted Flour | 2 Cups |
Baking Soda | 1/2 tsp |
Baking Powder | 1 Tbsp |
Sugar | 3/4 Cup |
Salt | 1/2 tsp |
- Butter the bottom and sides of a 9 1/2 x 5 1/4 x 2 3/4 pan
- Mix Apple Cider Vinegar with Milk, set aside.
- Beat eggs and set aside.
- Chop nuts if not already chopped.
- Sift and mix together in a bowl:
- Flour
- Baking Soda
- Baking Powder
- Sugar
- Salt
- Mix in chopped nuts
- Add and then combine all at once:
- Bananas
- Eggs
- Vegetable Oil
- Sour Milk you made earlier
- Vanilla
- Stir only enough to combine and moisten dry ingredients.
- Turn into pan and spread evenly.
- Bake at 350 degrees about 1 hour or until a cake tester comes out clean
- Cool bread 10 minutes in pan on a cooling rack after removing from oven, then remove and cool on rack.
